Waldorf Salad (Waldorfsalat) with a Norwegian twist

I was a little surprised to see Waldorf salad in Norway. It's not something that one instantly associates with Nordic cuisine. But it's a staple on many buffet tables and has an extra ingredient that is unexpected and delicious.
In Norway Waldorf salad is often eaten with cold meats, or with a whole roast turkey, but don't feel constrained by the norms, as it's a great accompaniment to many dishes and is even great served as a starter on it's own.
Classic Waldorf salad is apple, celery, nuts and grapes in a creamy dressing. The Norwegian version also contains pineapple for a little bit of added zing. It's perfect to add some extra flavour to a classic.

Waldorfsalat (Waldorf Salad)
Ingredients
2 red apples
1 small head of celery
140g red, seedless grapes
185g pineapple chunks
70g walnut halves
130g mayonnaise
70g sour cream
Salt and pepper
Method
Mix the mayonnaise and sour cream together.
Core the apples and cut into small dice. Slice the celery into rounds. Cut the grapes in half and snap the walnut halves in half.
Put all the ingredients in a bowl with mayonnaise and sour cream. Mix together well. Taste and add a little salt and pepper if needed. Transfer to a pretty bowl and chill well before serving.
Decorate with a few grape halves.
