Bread is and always has been an important part of the Nordic diet. Mass produced and stodgy bread is not something that many people in the Scandinavia and the Nordic countries will tolerate. They prefer bread with a nice variety of grains and wholemeal flour, bread that has a good crust and loaves that look like they are homemade. Of course is quite as good as homemade bread - that warm smell as it comes out of the oven that is so welcome on a cold day.
