The Nordic region is surrounded by hundreds of miles of coast. It varies from smooth, sandy beaches to rocky fjords and wild, coastlines. The weather is extreme to say the least in many places in the winter, but those cold waters are high in oxygen levels and support an abundance of life.
Lakes and rivers are teeming with fish and fishing is a popular sport. Many Scandinavia fish and shellfish dishes are wonderfully simple. They use just a few ingredients and focus very much on the high quality of the fish that is on offer.
If you can, try to find fish and shellfish that isn't farmed and comes from a sustainable source. You'll notice the difference in flavour.
