Swedish Flatbread Rolls with Smoked Salmon and Dill (Tunnbrödssnittar med Lax)

Swedish flatbreads, smoked salmon, dill and horseradish (and a secret ingredient!) What could be more Swedish!!! Quick and simple food does not need to be unhealthy or lacking in flavour as these flatbreads filled with smoked and cream cheese will prove.
Honest and good quality ingredients combine in this simple dish to bring together a delicious mouthful of Swedish flavours.
Swedish flatbread or lefse is like a thin rectangular flour tortilla that is perfect for rolling up with a favourite filling. Luckily for those not living in Sweden IKEA stocks some lovely flatbreads. In Norway I usually go for something similar which we call Vestlands lefse, although they can be a little sweet.

Flatbread Rolls with Smoked Salmon (Tunnbrödssnittar med Lax)
Ingredients
2-3 teaspoons grated horseradish
300g cream cheese
3 teaspoons Dijon mustard
1 tablespoon chopped dill
4 rectangular soft flatbread or lefse
65g baby salad leaves
150g smoked salmon
Method
Mix the horseradish, mustard and dill with the cream cheese.

Divide it into 4 and spread it evenly over the flatbreads.

Carefully lay the baby leaves over the cream cheese and top with the sliced smoked salmon. Make sure you get all the filling right to the edges.

Starting at the long side roll up the flatbreads tightly and chill for 30 minutes.
Cut into 2cm thick slices, sprinkle with some chopped chives and serve straight away.
