Dairy and grøt (or porridge) hold a special place in the Nordic diet. I'm a bit reluctant to use the word porridge because it really doesn't do it justice. In other parts of the world porridge is something we have for breakfast and usually include oats. But in Scandinavia it can be everything from a cool, creamy dessert to a rich, warming dish that is served with cold meats.
