Løvetannsirup (Dandelion Syrup), a Scandinavain Favourite

Not long after moving to Norway I decided to try my hand at making spruce tip syrup. Having lived in England where pine trees are not particularly abundant it was all new to me and I loved it. Since then I have made it every year.


It got me exploring other foraged syrups to make and one I constantly noticed here in Norway was dandelion syrup or løvetannsirup. Little did I know that it's a very typical Nordic food. Everyone here drinks it and lots of people also make it themselves. Last year I started putting it on my farm stand which have at the entrance to our drive and it sold out in hours. In fact it was so popular that people were messaging me asking when I would have more out on the stand.
