Wild garlic season is something I always look forward to. I can't wait for the tasty leaves to appear through the forest floor and I plan all the exciting dishes I am going to make with them. It is an easy wild green to spot mostly because you notice the smell before you see the leaves. The long elongated leaves grow from a central plant in random bunches. They are smooth and fleshy and grow in large swathes in slightly wet, woody areas. Crushing a leaf instantly tells you if it is wild garlic because it a strong garlic smell. Always be sure you know what you are picking though and do some research before you head out to forage.
