Swedish Potatoes in a Dill Sauce (Dillstuvad Potatis)

Sometimes simple dishes are the best to put the final touches on a meal. I often find that a delicious seasonal vegetable dish can become the star of a meal and this potato dish is exactly that. At the end of September in Norway the potato harvest begins and although the potatoes are going too be available for a long time, there is something wonderful about grabbing those fresh from the ground vegetables when we can.
