February in the Nordics is the heart of the winter. It's a time when the landscape is covered in snow, daylight is precious, and fresh produce from the fields is limited. It's frozen after all, but some foods are still at their best. Nordic kitchens remain vibrant, thanks to a combination of preserved foods, root vegetables, hardy greens, and preserved proteins that have kept generations going through long winters and go back as far as the vikings.
