February in the Nordics is the heart of the winter. It's a time when the landscape is covered in snow, daylight is precious, and fresh produce from the fields is limited. It's frozen after all, but some foods are still at their best. Nordic kitchens remain vibrant, thanks to a combination of preserved foods, root vegetables, hardy greens, and preserved proteins that have kept generations going through long winters and go back as far as the vikings. Understanding and using these seasonal ingredients not only connects you to Nordic traditions but also helps us to embrace mindful, sustainable eating. At time when so much focus is on avoiding ultra processed food and bringing more simple, natural ingredients into our lives, it's a chance to fall back on the kind of eating our grandparents, great-grandparents and beyond would have enjoyed.
