Danish Brunkager (Spiced Christmas Cookies)

The Scandinavians love spiced cookies at Christmas and it's a wonderful time to indulge a little, There are some classic ingredients that always find in Scandinavian and Nordic cooking at Christmas time and those warm fragrant spices like cinnamon and cardamom fill the air with Christmassy scents.

What I love about brunkager is not only that you can enjoy an authentically Danish cookie, but that they keep incredibly well for about a week. This means that you can make them well in advance or always have a stock of cookies to pull out of the cupboard when you have visitors drop in.

You can keep the dough in the fridge for a week without cooking it or pop it in the freezer for when you need it.
